We have a family favorite dessert in our household all summer long. We love to make “Fruit Pizza” . This is a cooking project the whole family can do together. In fact, my 2.5 year old son, my nephews, my brother, and my mom and I all love creating new and unique patterns in our fruit pizzas. This is a perfect treat to bring to a party, family event, or cookout. Everyone always loves a tasty fruit pizza. Besides, it really quite healthy!
This is all you need to get started:
Pillsbury Refrigerator Sugar cookie dough 1-2 rolls
SIggi’s Coconut Greek Yogurt or a light Cream Cheese
Fresh colorful fruit like: raspberries, strawberries, blueberries, blackberries, kiwi, mandarine oranges, grapes – green and purple.
Use fresh berries like raspberries, kiwi, mandarine orange, blackberries, blueberries, and pomegranates.
Cut the cookie dough into 1/4 inch thick pieces and lay out on your pan. Press so it is all flat and touching evenly layered. Bake in over for 12-18 minutes. Let cool for at least 1-2 hours before frosting. You can even let it sit covered in the refrigerator overnight. For best results decorate just before serving. Although it does last refrigerated, you will likely not have much leftover.
Spread an even thin layer of coconut yogurt over the entire cookie. I have also used in the past a cream cheese spread adding a 1/2c of powder sugar or Splenda to sweeten. I prefer the coconut yogurt because it is easier to spread, and you get more protein in each bite.
Decorate however your artistic ability lets you.
The flag pizza took about 1 pint of blueberries and 1 pint of raspberries. 1 whole banana thinly sliced. (**Be sure to dip the banana in lemon juice before using it on the pizza, as the color will quickly change.)
Or here is another fun design we created this year –
This fruit pizza has more of a spiral pattern, anything goes, that is why these are so fun to create!
This is one time where you should definitely enjoy playing in your food. It is healthy, tasty, and guilt-free to share with family and friends. Your dish will certainly be the hit of the party!
I would be HONORED if you would consider doing any/all just ’cause you’re so darn fabulously sweet 🙂
