I don’t know about you but as the weather is changing and getting cooler, I am loving the fall foods that warm the body and soul. My latest favorite with the Delicata Squash.
𝐓𝐡𝐞 𝐃𝐞𝐥𝐢𝐜𝐚𝐭𝐚 𝐒𝐪𝐮𝐚𝐬𝐡, a.k.a.
✅Bohemian squash, or
✅Sweet Potato squash
This oval squash with creamy colors yellow, green, white has so many nutritional benefits packed inside of it.
𝐈𝐭 𝐡𝐚𝐬 𝐡𝐞𝐚𝐥𝐭𝐡𝐲 𝐛𝐞𝐧𝐞𝐟𝐢𝐭𝐬 𝐥𝐢𝐤𝐞:
✅ it’s a good source of fiber + potassium
✅Provides small amounts of Vitamin B, C + magnesium.
✅Omega-6 fatty acid is a vital oil provided by the seeds inside the Delicata squash.
This squash can be 𝐞𝐚𝐬𝐢𝐥𝐲 𝐩𝐫𝐞𝐩𝐚𝐫𝐞𝐝 by sautéing, steaming, or roasting. I have tried it all three ways, and I typically prefer to lightly sauté it in a pan with about one tablespoon of coconut oil. It adds an extra sweetness to it making it even more desirable to the palate.
Even though when you cook it, it is important to scoop out the middle and the seeds. But don’t go throwing away the seeds. Those have a little known benefit. All of the Omega-6 fatty acid is found inside the seeds! 🧡𝐅𝐔𝐍 𝐅𝐚𝐜𝐭: you can roast the seeds like pumpkin seeds. To preserve the vital oils in the seeds roast your seeds at a low temperature for a short time about 160 degrees for 15 minutes.
