Favorite Fall Squash with Benefits

I don’t know about you but as the weather is changing and getting cooler, I am loving the fall foods that warm the body and soul. My latest favorite with the Delicata Squash.

๐“๐ก๐ž ๐ƒ๐ž๐ฅ๐ข๐œ๐š๐ญ๐š ๐’๐ช๐ฎ๐š๐ฌ๐ก, a.k.a. โฃ

โœ…Winter squash, โฃ

โœ…Bohemian squash, or โฃ

โœ…Sweet Potato squashโฃ

This oval squash with creamy colors yellow, green, white has so many nutritional benefits packed inside of it.

๐ˆ๐ญ ๐ก๐š๐ฌ ๐ก๐ž๐š๐ฅ๐ญ๐ก๐ฒ ๐›๐ž๐ง๐ž๐Ÿ๐ข๐ญ๐ฌ ๐ฅ๐ข๐ค๐ž:โฃ

โœ… itโ€™s a good source of fiber + potassium โฃ

โœ…Provides small amounts of Vitamin B, C + magnesium. โฃ

โœ…Omega-6 fatty acid is a vital oil provided by the seeds inside the Delicata squash.โฃ

This squash can be ๐ž๐š๐ฌ๐ข๐ฅ๐ฒ ๐ฉ๐ซ๐ž๐ฉ๐š๐ซ๐ž๐ by sautรฉing, steaming, or roasting.โฃ I have tried it all three ways, and I typically prefer to lightly sautรฉ it in a pan with about one tablespoon of coconut oil. It adds an extra sweetness to it making it even more desirable to the palate.

Even though when you cook it, it is important to scoop out the middle and the seeds. But don’t go throwing away the seeds. Those have a little known benefit. All of the Omega-6 fatty acid is found inside the seeds! ๐Ÿงก๐…๐”๐ ๐…๐š๐œ๐ญ: you can roast the seeds like pumpkin seeds. To preserve the vital oils in the seeds roast your seeds at a low temperature for a short time about 160 degrees for 15 minutes.

This is one of the yummy nutritious foods that we enjoy on the ๐๐š๐ฅ๐š๐ง๐œ๐ž ๐˜๐จ๐ฎ๐ซ ๐๐จ๐๐ฒ program!! โฃYou can add it to quinoa with pomegranate seeds and pistachios. It is a nutrient dense and deliciously tasty meal.
