Gluten-Free Pumpkin Morning Breakfast

We are in the holiday season and the traditional “hustle and bustle” of the season looks very different. However, I am sure you still need to “power up” for the day.

Maybe a little comfort food or a warm cozy dish full of nutrition is what you need.

Either way, I have got you covered babe!!

I have created this warm and filling breakfast that will nourish your belly for the adventures that your day will bring you. We all know with the times we are living in, that we have to be ready for anything. It is also important to eat well and keep healthy habits. Eating a good breakfast is an excellent daily habit. Try this breakfast treat out instead of the old boring bowl of oatmeal. It definitely has more fiber and flavor to last you through out the day. It is gluten-free and has options to sweeten that will work with insulin sensitivities and keeping your hormones in balance. By the way, this breakfast bowl has 11grams of fiber!

1 tbsp coconut oil⁣

1/2 cup pumpkin puree⁣

3 tbsp NOW Foods Hemp seeds⁣

1 tbsp NOW Foods Chia Seeds

1 tbsp NOW Foods Nutty Infusions Roasted Almond Butter⁣

1 tbsp Tahini⁣

2 tbsp NOW Foods Pumpkin Seeds⁣

1/2 tsp cinnamon⁣

2 tbsp shredded coconut⁣

3-5 tbsp of coconut milk⁣

Sweetener options: try either NOW Foods Vanilla Monk Fruit or Stevia Chai Spice⁣


Heat the coconut oil in a small pan with low heat.

Add the remaining ingredients, adjusting the coconut milk to achieve the desire consistency of thickness.

Serve warm.⁣
